Delicious Summer Fruits

Try the following with a variety of summer fruits, they are yummy and a great way of getting vitamins and antioxidants into your children.

Strawberry and Banana Ice Cream

285 ml/10 oz/2 cups strawberries

3 bananas

140 ml/5 fl oz/2/3 cup of any milk or yoghurt

1. Peel and slice the bananas and freeze in a container, so they will separate when frozen.

2. Wash and prepare the strawberries and freeze. Allow the strawberries to thaw for 5 minutes before processing.

3. Pour the milk into the food processor and switch on at full power. Gradually add the banana and slightly thawed strawberries. If the fruit starts to stick together, stop and break it up. Eventually it will become a smooth, creamy ice cream.

4. Serve at once or return to the freezer. If left in the freezer for long, pull out 20 minutes before serving.

Strawberry Cream

Serves 6

100 g/4 oz cottage cheese

150 ml/¼ pint natural low fat yoghurt

Clear honey to taste

700 g/ 1½ lb fresh strawberries

1. Puree the cottage cheese in a blender until smooth, or work it through a fine sieve.

2. In a bowl beat the cheese and yoghurt together with honey to taste. Set aside.

3. Prepare the strawberries, reserve 6 whole ones, and thinly slice the remainder with a sharp knife and divide equally amongst 6 dishes.

4. Pour the cheese mixture over the strawberries and chill in the refrigerator for about 1 hour. Serve chilled, decorate with the remaining whole strawberries.
