 Grilled Salmon on Puy Lentils

 

This goes down well in our household and is a substantial main course if served with plenty of vegetables, and it's high in omega 3!

2 tbsp virgin (or chilli) olive oil 1tbsp balsamic vinegar

1 tbsp fresh thyme leaves 300ml/10fl.oz/11/4 cups water

1 large red onion, peeled and finely chopped 3tbsp chopped parsley

247g/8oz/11/3 cups of well cooked 1tbsp of butter or olive oil spread

puy lentils 4 x 200g/7oz salmon steaks

2 large garlic cloves, peeled & crushed A little olive oil

Seasoning to taste

Add the chilli olive oil and thyme leaves to a frying pan and gently cook the onion until soft.

Add the lentils, garlic seasoning and balsamic vinegar. Simmer for 8 minutes, adding the water as soon as the mixture starts to stick.

Stir in half the parsley, add more water if necessary.

In another pan fry (or grill) the salmon steaks in a little olive oil until crisp on the outside and slightly underdone inside.

Stir the spread into the lentils.

Spoon a pool of lentils in juices onto each plate and serve with the salmon nesting on top.
