Energy Balls

These incredibly more-ish balls are now a pretty much permanent feature the fridge at home. They are incredibly rich and chocolaty and taste suspiciously like they are far naughtier than they actually are.

They are also a doddle to make!

Ingredients

1 cup of tahini paste

Half a cup of raisins

Half a cup of desiccated coconut

Half a cup of fresh dates (you can used dried but you need to soak them for about eight hours)

4 tablespoons of cocoa powder

1 teaspoon of vanilla essence

1 teaspoon of flaxseed oil (optional)

A handful of shredded coconut and/or ground almonds to coat

Method

Put all of the ingredients in a food blender and mix on the maximum speed. The mixture should turn into a firm, plasticine-type consistency. Roll the mixture into bite-sized balls then roll the balls on a board covered with shredded coconut or ground almonds. Chill in the fridge before serving.
