Lemon Chicken Tagine

Serves
4-8
4 onions
½ tsp cumin
2 lemons
1 tsp five spice
A few
small pieces of cinnamon bark
Pinch
saffron
Handful
chopped fresh coriander
Handful
chopped fresh parsley
8 pieces
chicken
Handful
green olives
Slice
the onions in rings and lemons into eighths.
Lay half
of them in an ovenproof dish and sit 4 of the chicken pieces on top.
Sprinkle
with half the herbs and spices.
Repeat
the process to make a two-layered dish.
Cover
the dish.
Cook
in the oven for 11/2 hours at 375 degrees or gas mark5.
Towards
the end sprinkle the olives on top.
