Breakfast Bar
Here is a recipe for a breakfast/snack bar. Great for the children's' lunch box or as a snack after school.
2 free range eggs 4 tsp ground cinnamon 85g butter 2 tbsp runny honey 300g porridge oats 100g dried fruit of your choice (the following are particularly nice alone or mixed: unsulphurated apricots, sultanas, cranberries, cherries, raisins, figs, peach) 3 tbsp seeds and/or chopped nuts of your choice (the following work well: sunflower, pumpkin, almonds, walnuts)
1. Pre-heat oven to 160C. Line baking tin (20x25cm) with foil. 2. Mix together the eggs, cinnamon, butter and honey. 3. Add fruit and seeds/nuts. Stir. 4. Add oats a little at a time. Mix well. 5. Press mixture firmly into tin. Cover with foil and bake for 30 minutes in centre of oven. 6. Uncover and bake for a further 5 minutes. 7. Cool and cut into bars.
