Baked pumpkin or squash with red onion and sage
This is the time of year for some wonderful looking pumpkins and squash. If you haven't tried them before, go on be adventurous, you could be pleasantly surprised.
1 small pumpkin or average size squash, peeled, deseeded and cubed. 2 red onions cut into wedges 4 garlic cloves, thinly sliced 3 tbsp chopped fresh sage A good extra virgin olive oil Salt and black pepper Preheat the oven to 220°c/425°F/gas mark 7.
Place the pumpkin and onion in a baking tray, scatter the garlic and sage over the pumpkin and drizzle olive oil over and season.
Bake for around 30 to 40 minutes, until the pumpkin is tender.
Serve hot. If it is too difficult to peel the pumpkin or squash I often cook it with the peel on and just scoop out the flesh before serving.
